The instant pot takes care of all the hard work and all the time, infusing all the flavors into the most tender, juicy shredded pork in less than 90 minutes. The pork also keeps VERY WELL so these can easily be prepared ahead of time for all the socially-distanced-get-togethers. Stay safe and stay cool, friends. In a small bowl, combine brown sugar, salt, paprika, chili powder, oregano, garlic powder, mustard, cayenne pepper, cumin and pepper. Season pork with brown sugar mixture. Stir in chicken stock and 4 tablespoons vinegar, scraping any browned bits from the bottom of the pot. When finished cooking, quick-release pressure according to manufacturer’s directions. 2 tablespoons vinegar and season with salt and pepper, to taste, if needed.
