Spray the tray with oil and pop it in the oven to heat up. I stuffed these Baked Chicken Quesadillas with the makings of Chicken Fajitas! There’s no denying that they don’t come out quite as shatteringly crispy as you can make them on the stove by pressing down firmly on the quesadillas while they cook.

Also the other thing I observed is that the tortilla starts to wrinkle after around 20 minutes. Small compromises for the sheer convenience of of being able to make a big batch in one go!
